Osso Buco is a specialty of Lombard cuisine, from the Northern part of Italy, of cross-cut veal shanks braised vegetables, red wine, and broth. As known as ‘hole of bone’ for its direct translation from the name, the marrow in the hole in the bone, a prized delicacy, is the defining feature of the dish as it provides a rich flavor to the sauce, making the meat and broth part decadent and juicy. The moist herbal yellow rice acting as the bed for the meat is cooked with Italian rice and an Iran herb to enhance flavors and aroma.
Served with a large portion that can suit 1-2 people, the dish goes perfectly well with a glass of red wine to enhance the more subtle tastes of every ingredient added to it. - To eat, reheat the shanks and rice in an oven at 325 degrees Fahrenheit or 162 degrees Celsius for 30 to 45 minutes. Do not reheat them with a microwave as they will become too dry.
